
Savoury muffins can be a great lunch addition for picnics & family outings or a quick on the go snack. They are easy to make & fun to do with children.
From personal experience we have found that experimenting in the kitchen with our toddler has always been a success & encouraged him to try new foods! After all, they do say anything they love to make, they will love to eat! Expect mess, they’ll enjoy mushing, squishing & sculpting – let them get involved as much as possible (but only if it is safe to do so of course & always be there to supervise). Before you know it you will have a budding chef in the making!
Ingredients – Makes 12
- 320g self raising flour
- 1/2 tsp paprika (optional)
- 80g butter
- 1 egg
- 260ml milk
- 3/4 slices of ham
- 100g cheese
- 1/2 courgette
Method
– Preheat oven to 190 degrees
– Add flour & paprika to a large bowl & mix. Then add butter, combine using finger tips until resembles a breadcrumb consistency.
– Next add the egg & milk to the bowl. Mix together with wooden spoon
– Tear or chop the ham into small pieces, grate cheese & courgette. Add to flour mixture & fold in so that the ham, cheese & courgette is evenly distributed
– Using muffin/cupcake tin & cases, spoon the mixture into the cases.
– Cook for 20 minutes then place on wire rack to cool
